CEV can realize winemaking for a customer or for its wine trading.
White wines : Winemaking takes place in a old cellar wich can receive 32 000 hL. It composed of concrete vat whose four have a cold system and with stainless steel vat.
Red wines : Fermenting room created in 2015 can receive 4 300hL. It contain stainless steel vats equipped of regulated cold system. Others equipements allows qualitive treatments for any types of harvest (stemmer, punching, sorting table)
Aging wine can takes place in vat, in oak barrels or with both methods. That's why in 2015 too, a barrel cellar was built wich can receive 1500 barrels.
